As Christmas is fast approaching, I’m excited to share my Christmas cake recipe, which, actually, is a fabulous fruit cake you could make any time. It has evolved over the best part of a decade and my strong sense of sparkly kitsch has led me in recent times to use Cherry Brandy as my infusion of choice. I now feel this recipe has reached its pinnacle; this is the version I will pass on to my daughter. I have also put together a step-by-step guide to applying marzipan and icing for a smooth, professional finish, should you wish to go down that road.
